Oh, Force. As far as I know, the eating people has only happened when he's completely out of his mind. He's an obligate carnivore, and meat was there. Honestly, I tried to forget about that.
Maul is grumpy and combative and, as you found out, has very hit and miss social skills. Despite being a literal empath, he does not always take people's feeling seriously, unless confronted with them. And my personal opinion is that he has not examined a lot of the stuff he was taught when he was young, enough.
But I believe that ultimately, this guy? He does not want to be like the horrible man who raised him. He mostly just wants a family and some students to be proud of, and some security. He knows going around acting on his worst impulses isn't going to get him that, and he's trying to do learn and do better. Yeah.
Unfortunately, he has a tendency to rely on other people to tell him right and wrong, and he can get tetchy when they don't tell him what he wants to hear.
I would NOT have picked him for the empath thing, no. But the rest is a little familiar to me at least.

Force-sensitives - that's what we call psychics in my world - are pretty much always a little empathic but that doesn't mean he bothers to pay attention to it.
If you're sure you're up for it, I can't say I wouldn't be relieved. I might be wrong, but I think I'm the person he's most likely to go to for that kind of advice that's here right now, and like, I'd do it. But it's kinda fraught, on both sides.

And well, the guy who raised him is Emperor of most of the known galaxy, when I'm from. Hard to talk about the big historical strokes without things Maul's at least tangentially part of.

Fair enough. I guess there's no need to go into full historical lecture or something, now either, but it basically means his master decided he's a fully trained Sith. Sith being a particular sect of Force Sensitives.
For the record, I'm a Jedi Knight, which means I was trained in a different tradition, the two tend to be opposed. We've got an informal sort of truce with Sith and Jedi currently in residence, everything should be cool, barring like, Trial mind altering effects, because who knows, with those.
